Jollof Rice – A Nigerian Classic

    Ingredients for 3 meals

    • Parboiled rice

      500g
    • 1 kg tomatoes (or 2 cans of chopped tomatoes)

    Cooking instructions

    1. Puree the tomatoes, tatashe, 1 onion and habanero.
    2. Heat oil, sauté chopped onion and tomato paste, then add the tomato mixture and simmer for about 10 minutes.
    3. Add broth, spices, and bay leaves.
    4. Wash the rice and add it to the sauce, stir well.
    5. Cover and cook over low heat for about 30–40 minutes, stirring occasionally.
    6. Serve with roasted meat, fish or vegetables.
